Slow cooked beef curry

Ingredients

1 kg chuck beef

1 pkt red curry paste

4 cups of water

1 tin of crushed tomato

1 tin coconut milk

2 mangoes sliced

 

 

Method

Add diced beef, I pkt curry paste and enough water to cover beef.

Cook until beef is just soft to the touch.

Add tin tomatoes, cook for further 2 hours, if too much liquid leave lid off.

Add coconut milk and cook for 1 hour.

Add mango, cook for 30 min.

Cooking times may vary to beef cut size.
